Yoko Kanno. She's able to do everything from the sweeping orchestral pieces of Escaflowne to the downright funky jams of Cowboy Bebop, and the rythmic techno beats of Ghost in the Shell SAC. After her, I'd say it's the composer behind Final Fantasy (who's name slips my mind). Also, I love the music behind the .hack series, but I can't remember the name of that composer either! And I don't know if this counts as an anime composer, but I have the Soul Calibur 3 soundtrack, and it's some of the most beautiful and energetic music ever composed. I've listened to it all day long for the past 4 months, and I still haven't gotten tired of it.

FFVII: Advent Children, Helsing OST, .hack//sign OST 1-2, .hack//sign Song of the World OST, Ghost in the Shell SAC OST1, All Cowboy Bebop music (including the music from the movie DVD), Guilty Gear Isuka OST, Guilty Gear X Heavy Rock tracks OST, and Guilty Gear XX Sound Alive OST, Vampire Hunter D: Bloodlust OST, and finally some Dracula X: Nocturne in the Moonlight OST. I think there's also some Initial D Super Eurobest thrown in there, too.
